Roasted Yams

Roasted Yams sort of form cups like bologna does when it's heated in the microwave.

Roasted Yams Recipe
from Allrecipes

1 large yam, peeled and cut into 1/4 inch thick slices
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2-3 tablespoons olive oil, divided

Preheat the oven to 350°F. Lightly grease a 7x11" baking dish with a 2 tsp or 1 tbsp olive oil to coat.



Add yam slices to the baking dish; salt, pepper and oil the slices. Toss with good flicks of the wrists. Arrange slices in the dish so they are overlapping slightly.

Bake in the preheated oven until potatoes are tender and have begun to wrinkle around the edges, about 30 minutes.


And then eat some Roasted Yams with Honey-Lime Drumsticks and Baked Corn-on-the-Cob.



This recipe was simple to prepare and certainly worth making.  No sugar, so extra spices; just oil, salt and pepper.  A total winner of a recipe where the yam was allowed to shine. Maybe I'm just saying that since I was on a big-time oven-baked fries bender lately.

Cost:
  • yam: $0.77
  • oil and spices: I'll SWAG this to be $0.23 to make it round out nicely

TOTAL: $1, easily making four small servings or one giant serving that winds up forcing me to eat only one Honey-Lime Drumstick.
